Beans Upkari

Beans Upkari is a very simple dish, which gets ready in like 15 mins or so and is a very delicious dish (for people who love beans that is). It is prepared by tempering the green beans and cooking them just tender enough to leave them crunchy and then topping them off with grated coconut.

We konkani people are always accused of using a lot of coconut, but what can we do... our tongues have gotten used to that flavor and we just cannot get enff of it :) We LOVE coconut !! and use it in almost every dish that we make, either grind it for the masala gravy or top it off like garnish !! Beans upkari is my sister's favorite dish and she likes it with potatoes added.
 
Serves 4
Preparation Time (5-10 min)
Cooking Time - 15 mins approx

Ingredients
 

Green beans - 3 cups (diced)
Onions - 1 cup (finely chopped - OPTIONAL)
Grated coconut - 1 tbsp
Salt - as per taste
 
For Tempering

Oil - 1 tbsp 
Red Chillies - 2
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Chana Dal - 1 tsp

Method

Wash the diced green beans. You can also wash the beans before dicing them. Drain all the water and keep them aside.


Heat a wide pan on medium flame. Add the oil. When the oil is a bit hot, add the mustard seeds. When the mustard seeds start spluttering, add the chana dal to it. Then add the urad dal into it. When the urad dal starts turning brown, add the red chillies into it. Fry for 1 min. (You can also add chopped onions and fry for another 3 mins - but I prefer it without the onions)
Add the diced green beans into it. Add salt and mix well. Cover with a lid and let it cook for 10-15 mins by stirring constantly every 2-3 mins. Cook until the green beans are just changing color. The green beans should be tender and cooked but still crunchy when eaten. Add grated coconut to the dish and mix well. Remove from flame. Beans upkari curry is ready to be eaten !!! You can have it as a side-dish with dal and rice or curd rice... Its a very yummy accompaniment and is pretty easy to make as you have already seen.
